Air dried is the traditionnal dehydration process.
The product, peeled, washed and sliced is put on trays and dried in a heated tunnel, oven or bin, depending on the required quality.
After being manually and mechanically sorted, the dehydrated product is stored as flakes, or ground into granules or powder.
The raw material is frozen and placed in a strong vacuum. The water in the food then sublimates, it turns straight from ice into vapor.
This method retains all the original characteristics of the product and optimises the flavors.
The product is then manually and mechanically sorted.
